A recipe from the Indian West Coast- Vegan and Vegetarian
Ingredients (Serves 2)
Prep time: 5-10 min, cooking time about 10 min
Veggies
1 Medium Onion diced
1 large Tomato diced
200 - 250 g Mushrooms cut in slices
Spices
ginger-garlic-chili paste: garlic (2 thick or 4 thin cloves) + ginger (about 2-3 cm of ginger) + green chili 1 single or buy ginger-garlic paste and add two tea spoons of it :) and add thinly chopped chili
1/4 tsp turmeric (kurkurma) powder
1/4 to 1/2 tsp (red chili powder) - alternately use cayenne or paprika powder
1/4 to 1/2 tsp garam masala
1/4 to 1/2 tsp Biryani or Chicken Masala (optional)
salt to taste
chopped corriander leaves (a handful) to sprinkle over
If you are European and find Indian food too spicy, omit the green chili. The only spices you will need to buy are garam masala and turmeric (kurkurma). They will come in handy for cooking hundreds of Indian dishes. So, its a good investment.
And yes, the word Masala: means mixture of spices. So depending on what kind spices are in the mix there are different types of Masalas :)
Recipe
heat about 1 tbsp oil in pan
add the chopped onions and roast a bit till pink on medium flame
add the ginger-garlic chili paste and stir for a minute
add chopped tomatoes and mix for a minute
add all the spices- turmeric, chili powder and garam masala. For extra taste you may add biryani or chicken masala. Mix for two minutes, till it feels like tomatoes have become a paste.
add the mushrooms and stir. If it feels dry, you made add a little oil.
sprinkle salt to taste. stir and cover with lid for about 3 minutes.
add the chopped corriander leaves and mix well.
at this stage you can taste the gravy. If you want it more spicy, add more chili powder. If you want it tastier, you can add little bit more garam masala and/or check salt levels. Mix well and keep the lid on for the next 2-3 minutes and viola!!!
Enjoy it with rice or bread or anything that you like with a tasty gravy :)
